Toscano Brasato (Tuscan Pot Roast)
4-6 lbs. lean beef for pot roast
3 tablespoons olive oil
1 cup vermouth or white cooking wine
1	quart canned tomatoes
5-6 cloves garlic, crushed
VS cup chopped parsley

2 bay leaves
1 teaspoon pepper, freshly ground
1 Vi teaspoon dried basil
5 fresh basil leaves

In a Dutch oven sear the beef in the olive oil. Pour off any fat. Add remaining ingredients; cover and simmer 31/2-4 hours. Serve sauce with the meat. Serves 6-10. (Any leftover sauce is a great base for a soup the next day.)

The satin stitch is made by carrying the thread across the shape and then returning underneath the fabric.
